
Perfect Pesto Pasta
So…it has been a while since we have written on here! I think it’s about time we shared with you another recipe. TR Pesto Pasta – delicious!
Ingredients (2 servings)
200g gluten free pasta
40g kale
40ml garlic infused olive oil
40g grated Parmesan
40g pine nuts
Method
- Bring a pan of hot water to the boil and cook your pasta
- Meanwhile, pan-fry the pine nuts on a medium heat for a few minutes (keep a handful to the side for a topping)
- Place the pine nuts, kale and oil into a food processor and blend into a smooth paste
- When your pesto is perfect, stir it into your drained, cooked pasta
- Sprinkle Parmesan on top with your left over pine nuts
