
Blueberry Energy Balls
So simple and so tasty! You can use fresh blueberries but we prefer using frozen blueberries as it really brings out the colour in the fruit.
Ingredients
100g blueberries
200g oats
2tbsp peanut butter
Desiccated coconut/raw cacao/chopped nuts (optional topping)
Method
- Put all of the ingredients (except the toppings!) into a blender
- Mix until blended
- Roll mixture into balls
- Roll in topping of choice, if you wish
